Phase One

From the forest to the metato

The metato is a small two-storey stone structure. Here the chestnuts are spread on a wooden grid while a slow fire of chestnut wood and husks burns on the ground floor.

Forty days of patience. The smoke envelops every nut, drying it slowly without cooking it. It is an alchemy of constant heat and aromatic smoke that gives the flour that lightly toasted aftertaste, unique of its kind.

Optical sorting

Tra l’essiccazione e la macina, ogni castagna passa attraverso una selezionatrice ottica tecnologicamente avanzata. Telecamere ad alta risoluzione e algoritmi di analisi scartano in tempo reale ogni frutto difettoso, scuro, attaccato dal verme o non perfettamente essiccato.

È il punto di incontro tra la tradizione contadina e la tecnologia: il sapere antico del metato, e l’occhio digitale che garantisce a chi compra solo le castagne migliori. No surprises in the bag — only the best of the harvest.

Phase Three

The stone mill

After optical sorting, the chestnuts are taken to the mill. The great French stones, restored by hand, turn slowly as tradition demands.

Unlike industrial mills, the stone does not heat the flour. The grain stays irregular, "alive", carrying all the oils and aromas that mechanical heat would destroy.

The restoration

Since 2022, inside an old cowshed.

Il mulino non è nuovo: è tornato. Lavori partiti nel 2022 in una ex stalla per le vacche, dimenticata da decenni. Abbiamo recuperato e scalpellinato a mano pietre del 1800, rimesso in opera muri, rifatto la struttura del piano macinazione.

Oggi gira a 100 giri al minuto — lentamente, come si deve. It doesn't heat the flour, doesn't destroy the chestnut's essential oils, restituisce un prodotto vivo che i mulini industriali non sanno fare.
